Broths are delicious additions to meals and a powerful way to nourish and strengthen your body. By simmering bones, vegetables, herbs, and spices in water for an extended period, you extract valuable nutrients and minerals easily absorbed by the body. These nutrients help support your immune system, improve digestion, and promote overall well-being.

Whether you prefer a classic bone broth made from chicken, beef, or fish bones or a vegetarian version using a variety of vegetables and herbs, the possibilities are endless.


Select high-quality ingredients such as organic bones, fresh vegetables, and aromatic herbs to make a nourishing broth. You can add ginger, garlic, turmeric, and seaweed to enhance the flavour and boost the nutritional value of your broth. Simmer the ingredients over low heat to allow the flavours to meld together and release the nutrients into the liquid.

Recipes


BEEF BONE BROTH

In TCM, the Kidney is the root of yin and yang and the powerhouse of the body. The season associated with the Kidney is Winter, so it’s essential to conserve energy during this time. Bone is the tissue related to the Kidney, so incorporating bone broth will give your body a much-needed boost.


Ingredients


  •  2 or more pounds beef bones

  •  1 white onion, roughly chopped

  •  2-3 carrots, roughly chopped

  •  2 stalks of celery, roughly chopped

  •  2 bay leaves

  •  2 teaspoons sea salt

  •  1 teaspoon black pepper


Method

  1. Preheat the oven to 180 degrees Celsius.

  2. Place the bones in a roasting pan, then put in the oven and roast for 30 minutes.

  3. Transfer the bones to a large, deep pot. Cover with water.

  4. Add the chopped vegetables, bay leaves, and salt and pepper to the pot. Bring to a rolling boil.

  5. Lower the heat and let it simmer for 8 to 24 hours, adding water to cover the bones as needed. (The broth can also be cooked in a slow cooker.) Skim any impurities from the surface of the broth with a large spoon and discard.

  6. Use a large spoon to remove the vegetables and bones from the pot. Discard. Then, pour the broth through a fine mesh sieve to remove the remaining solids.

  7. You can use this broth as a soup base, drink it as a hot tea, or use it in place of water when cooking rice or other grains.


It is important to use good quality bones (organic, grass-fed). As the bones are simmered for hours, gelatin and minerals are released from the joints and bones. The longer the broth is cooked, the more concentrated the flavour becomes.
